An employee was observed handeling won tons with their bare hands.
Cut cabbage was 51�°F in an ice bath on the preparation table near the entrance to the kitchen.
The cutting boards on the grill line were severely grooved.
The cardboard lining the storage shelf next to the mixer was not smooth and easily cleanable. The caulking on the dish machine and 3-compartment sink drainboards was soiled with mold. The storage shelf under the preparation table on the opposite side of the grill line was rusted. The trim above the bar 3-compartment sink was in disrepair. The door gasket on the walk-in cooler was torn.
The interior of the 3-door reach-in cooler at the grill line was soiled with food debris. The interior of the soda holster at the bar was soiled with mold.
The door gaskets on all reach-in coolers throughout the kitchen were soiled with food debris. The paper towel dispenser near the employee restroom was severely soiled with debris. Ice build-up was present on the condenser unit in the walk-in freezer. The fans guards in the walk-in cooler were soiled with dust.
Tongs on the oven handle were stored in a manner that does not prevent them from contamination.
The floor under the dish machine and 3-compartment sink was severely soiled with food debris. The floor edges throughout the kitchen were severely soiled with debris. The ceiling throughout the kitchen was severely soiled with dust. The floor under the grill line was severely soiled with grease and food debris. The floor in front of the wait station was soiled with food debris. The floor under the soda syrup storage racks was soiled with syrup and debris. Several ceiling tiles near the walk-in cooler were missing.
