Standard Inspection
Equipment food-contact surfaces or utensils are dirty. Melted butter container. To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
The physical facilities are not being maintained in good repair. Repair floor where necessary to provide smooth and easily cleanable surfaces. The physical facilities shall be maintained in good repair.
Critical: Observed containers of poisonous or toxic chemicals that did not contain the manufacturers label. To prevent illness, containers of poisonous or toxic materials and personal care items shall bear a legible manufacturer's label.

TCS foods were not properly thawed. Found frozen chicken thawing in standing water in in prep sink. Corrected. TCS food shall be thawed as required in this rule (under refrigeration, under cold running water, in microwave immediately prior to cooking, as part of the cooking process).
