To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. -Remove all items from inside the 3-compartment sink, clean and sanitize the sink. -Disassemble and then clean and sanitize the hot dog roller machine.
- Critical: The handwashing sink was not easily accessible. -Observed several items stored in and on the hand sink in the back room.
A handwashing sink shall be maintained so that it is accessible at all times for employee use. -Remove all items from the hand sink -Discontinue storing items in the hand sink.
- Observed a build-up of dirt and debris. -Observed buildup, debris, and spilled liquid in the back room.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
