To prevent illness, refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it: (a) exceeds the temperature or time specified in (G)(1) and (G)(2) of this rule, except the time the food is frozen
Equipment and/or components are not maintained in good working order. Prep top cooler on cook line side was maintaining a temperature of 47F. TCS Foods including cooked mushrooms and cooked onions were discarded during inspection. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Operator adjusted temperature of cooler so that it was maintaining a temperature of 41F and below and will not store TCS foods in cooler until temperature has been reached.
