- Observed improper storage of food items. Foods were stored on the floor in the following areas: 1. Case of shelled eggs and broccoli were observed on the floor of the dairy walk-in cooler. 2. Cases of popcorn and chips were observed being stored directly on the floor in middle aisle between aisles 16 & 18.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
- Observed improper storage of food items. The following was observed: 1. Chemicals (ie, armor all and wd-40) observed being stored directly above cookies, crackers, and chips in end cap between aisles 14-16.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor. Remove chemicals above food products.
- Critical: Refrigerated, ready-to-eat, TCS foods held refrigerated for more than 24 hours were not properly date marked. The following was observed: 1. Bag of sliced ham and swiss cheese without date mark was observed on a shelf inside the deli walk-in cooler.
To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one.
- Equipment and/or components are not maintained in good working order. The following was observed: 1. Threshold between the walk-in deli and dairy coolers is raised and loose.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Re-secure threshold between the deli and dairy walk-in coolers to eliminate trip hazard.
- Equipment and/or components are not maintained in good working order. The following observation was made: 1. All interior lights are not working in the pizza freezer bank along the south wall.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Restore lighting to a properly working state inside of the pizza freezer bank along the south wall.
- Non-food contact surfaces of equipment are dirty. The following was observed: 1. Inside floor/shelf of the freezer bank along the south wall contain a build-up of food debris. 2. Inside floor/shelf of the dairy racks contain build-up of old food/liquid debris. 3. Faygo pop cooler at end cap between aisle's 14 and 16 contains mold on interior tracks/shelves.
Nonfood-contact surfaces of equipment shall be kept clean.
- Observed no handwashing sign(s) posted at handwashing sink(s) used by employees in the men's restroom.
A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees. NOTE: Signs provided to operator at this time.
- Observed mops being dried using an unapproved method (ie. mop was wet and being stored inside of the empty mop bucket).
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
