- Observed inadequate number of hand washing sinks.
To ensure frequent and proper hand washing, at least one hand washing sink, a number of hand washing sinks necessary for their convenient use by employees in areas specified under paragraph (L) of this rule, and not fewer than the number of handwashing sinks required by the Ohio building code shall be provided. [Currently, one of the three compartment sinks is being used as a hand washing sink, and a plastic bin is being used for the sanitizing solution.]

To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less.
