  • Observed improper reheating of food for hot holding. Mac and cheese and spaghetti were not properly reheated to at least 165 F.
    To prevent the growth of pathogens, time and temperature controlled for safety (TCS) food that is cooked, cooled and reheated for hot holding shall be reheated as required by this rule. Operator placed both products back into the microwave to reheat.
  • Observed floors, walls, and/or ceilings that were not constructed of approved materials.
    As discussed, the wooden floor constructed behind the display cases needs to be sealed or covered in such a way that it becomes non-absorbant, smooth, and easily cleanable.

    To prevent illness, the identity of the source of shellstock that are sold or served shall be maintained by retaining shellstock tags or labels for ninety calendar days from the date that is recorded on the tag or label by using an approved record keeping system as required by this rule.
  • Critical: Observed improper reheating of food for hot holding. Spaghetti and mac and cheese were reheated in a microwave to less than 165 F.
    To prevent the growth of pathogens, time and temperature controlled for safety (TCS) food that is cooked, cooled and reheated for hot holding shall be reheated rapidly to 165 F.
  • Observed floors, walls, and/or ceilings that were not constructed of approved materials.
    As discussed, in previous inspections operator needs to replace raised wood slat flooring with a floor surface that is smooth and easily cleanable such as plastic or sealed concrete.
