  • Non-food contact surfaces of equipment are dirty (ie. interior walls and ceiling of the dairy walk-in cooler contain surface mold).
    Nonfood-contact surfaces of equipment shall be kept clean. Wash interior walls and ceiling of the dairy walk-in cooler to eliminate mold growth.
  • The plumbing system was not properly maintained (ie. The only hand wash sink in the men's public restroom has been temporarily placed out of order due to leak, however, the restroom is still open and available to the public).
    A plumbing system shall be properly maintained. Restore handsink to a properly working state in the men's public restroom. NOTE: Hand sanitizer is not approved to be used in place of hand washing with soap. The restroom should be closed to the public due to no working hand sink. Temporarily convert the women's public restroom to unisex until repairs are complete. I was told parts are on order to repair the men's public restroom hand sink in the very near future.

  • Observed accumulation of soil residue on nonfood-contact surfaces. -Observed buildup on the dairy aisle cooler shelves in the milk and sour cream sections.
    Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. -Clean shelves to remove buildup.
  • Critical: Observed a handwashing sink without water at the required temperature. -Observed water temperature at the bakery hand wash sink at 80F.
    To ensure proper cleaning of hands, a handwashing sink shall be equipped to provide water at a temperature of at least 100° F (thirty-eight degrees Celsius) through a mixing valve or combination faucet. -Repair as necessary to provide required water temperature.
  • Observed a build-up of dirt and debris. -Observed buildup inside the walk-in freezers (kitchens, bakery).
    The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. -Clean to remove buildup.
