Critical: Equipment food-contact surfaces or utensils are dirty. The ice cream freezer has accumulation of ice. To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch. Thoroughly clean this unit to ensure air flow.

Critical: There was no person in charge present in the food facility during inspection. Neither food worker on duty has been properly trained in food protection. To minimize the risk of contamination, the license holder shall be the person responsible for the FSO or RFE, or may be the person in charge, or shall designate a person in charge and shall ensure that a person in charge with applicable knowledge is present during all hours of operation. During all hours of operation there must be a PIC who is certified in food protection. PIC and ServSafe applications were provided.
Non-food contact surfaces of equipment are dirty. The interior of the undercounter ice cream station freezer needs to be cleaned and sanitized (including door gasket) to remove build up and deter pests much build up was noted there.

Critical: TCS foods were not being held at the proper temperature. Hot dog on roller was 118F. This TCS food must be hot held at or above 135F to inhibit pathogen growth. Except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except for those roasts that are cooked as required may be held at 130° F), or at 41°F or less. Non-food contact surfaces of equipment are dirty. Considerable ice build up in the hard ice cream freezer chest must be eliminated to ensure the doors will close. Nonfood-contact surfaces of equipment shall be kept clean. Defrost/clean this unit to eliminate build up and facilitate door closing.
