Stored frozen foods shall be maintained frozen. -Repair or replace freezer as necessary. Do not use freezer if foods are unable to stay frozen solid.
- Critical: Food-contact surfaces and utensils were not sanitized using an approved combination of exposure time, chemical concentration, temperature, and/or pH. -Observed greater than 200ppm chlorine in the 3-compartment sink.
To prevent pathogen growth, after being cleaned, food-contact surfaces and utensils shall be properly sanitized by a method approved in this rule. -Corrected
