To prevent foodborne illness, refrigerated, ready-to-eat, TCS food held at a temperature of 41°F or less for more than 24 hours shall be clearly marked at the time of preparation or the time the original container is opened to indicate the date or day, that is a maximum of seven days, by which the food shall be consumed, sold, or discarded. The day the food is prepared or opened is day one.
- Equipment and/or components are not maintained in good working order. The condenser in the walk-in cooler is leaking.
Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code. Repair this unit to eliminate the leaking / standing water from the interior of the cooler. Correct By: 13-Nov-2015

Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Remove and replace the Kelvinator chest freezer with the damaged lid.
- The plumbing system was not properly maintained.
A plumbing system shall be properly maintained. 1. Repair the clogged handsink to make it usable. 2. Correct any other clogs or plumbing issues by this date as well. 3. Remove the makeshift wooden lid from the grease trap and replace it with a proper lid. If a lid cannot be found, the entire grease trap must be replaced. Correct By: 13-Nov-2015

A plumbing system shall be properly maintained. **Hand sink is not working and is scheduled for repair. Hand washing is being done in three compartment sink at this time. Repair sink as soon as possible to ensure proper and frequent hand washing.
- Observed waste receptacles or handling units that were not properly cleaned.
Receptacles and waste handling units shall be thoroughly cleaned in a way that does not contaminate food, equipment, utensils, linens, or single-service or single-use articles, and waste water shall be properly disposed. Soiled receptacles and waste handling units shall be cleaned at a frequency necessary to prevent them from developing a build-up of soil or becoming attractants for insects and rodents. **Clean area surrounding dumpster to eliminate accumulation and reduce/eliminate attraction of pests.
