    Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
  • Critical: Equipment food-contact surfaces or utensils are dirty observed the interior of the freezer with stagnant water, liquid etc. via melting produces (non tcs) .
    To prevent contamination, equipment food-contact surfaces and utensils shall be clean to sight and touch.
  • Critical: The handwashing sink was not easily accessible observed handsink with container of untensils reviewed with operator .
    To ensure frequent and proper handwashing, a handwashing sink shall be maintained so that it is accessible at all times for employee use.
  • Observed no conveniently located handwashing sink(s).
    Handwashing sinks shall be conveniently located as specified under paragraph (L) of rule 3717-1-05.1 of this code.

  • Critical: Food on display was not properly protected from contamination by consumers. exist an open bar for approx 18 toppings with no sneeze guard or cover.
    To prevent contamination, except for nuts in the shell or whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer, food on display shall be protected from contamination as required by this rule.
  • Critical: Utensils and food-contact surfaces of equipment were not sanitized at the required frequency. at the time reviewed with operator the proper method ffor washing rinsing and sanitizing. facility has been washing sanitizing and rinsing dishes, reviewed and discussed.
    To prevent pathogen growth, utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning.
  • Critical: Handwashing sink is being used for purposes other than handwashing at the time of the inspection storage container on top of sink, sink not in use-.
    To prevent contamination, a handwashing sink may not be used for purposes other than handwashing remove all storage material from on top of sink and provide access to sink and repair to working order.
