- Food employee(s) did not have their hair effectively restrained.
To prevent contamination, food employees shall effectively restrain or cover hair to keep their hair from contacting exposed food, clean equipment, utensils or linens or unwrapped single-service or single-use articles. Food service employee had long hair and was not utilizing any means of hair restraint while handling food. Employee was able to obtain a hat which did control the hair from food related activities. A hat,hair net or some physical means to control hair i.e., a pony tail w/ band/clips must be utilized by all food handlers w/ longer hair to prevent hair from contaminating food stocks while food is being prepared.
- Equipment components are not intact, tight or properly adjusted.
Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. Re-apply caulk/seal for splash guard to handsink where it meets FRP walled surface so sanitation can be properly maintained w/ no gaps present that allow for dirt/debris to collect.
- Observed floors, walls, and/or ceilings that were not constructed of approved materials.
Where FSO or RFE activities are conducted, materials for indoor floor, wall, and ceiling surfaces shall be smooth, durable, and easily cleanable
