    Equipment shall be maintained in a state of repair and condition that meets the requirements specified under rules 3717-1-04 and 3717-1-04.1 of this code.
  • Non-food contact surfaces of equipment are dirty. - Observed a build-up of food debris on interior of microwave. - Observed a build-up of food debris on exterior of waffle cone iron and and cart underneath.
    Nonfood-contact surfaces of equipment shall be kept clean. - Clean and sanitize interior surface of microwave, exterior of waffle cone iron and cart to remove build-up and prevent contamination of food.

  • In-use utensils are improperly stored. -Observed scoops and spoons stored with handles in contact with toppings. -Observed paper cups stored in bulk topping boxes in the walk-in cooler.
    During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored as described in this rule. -Store scoops and spoons on a clean surface or with the handle so that it is not in direct contact with food. -Discontinue storing cups without lids directly in food containers. Use utensils with handles.
  • Observed accumulation of soil residue on nonfood-contact surfaces. -Observed food spills and food debris inside reach-in coolers.
    Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. -Clean interior of coolers on a regular basis to prevent food buildup.
  • Observed a build-up of dirt and debris. -Observed food buildup and debris on the floor, especially in hard to reach places, and in the walk-in freezer.
    The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
