- In-use utensils are improperly stored. -Observed scoops and spoons stored with handles in contact with toppings. -Observed paper cups stored in bulk topping boxes in the walk-in cooler.
During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored as described in this rule. -Store scoops and spoons on a clean surface or with the handle so that it is not in direct contact with food. -Discontinue storing cups without lids directly in food containers. Use utensils with handles.
- Observed accumulation of soil residue on nonfood-contact surfaces. -Observed food spills and food debris inside reach-in coolers.
Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. -Clean interior of coolers on a regular basis to prevent food buildup.
- Observed a build-up of dirt and debris. -Observed food buildup and debris on the floor, especially in hard to reach places, and in the walk-in freezer.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed.
