- TCS foods were not being held at the proper temperature. [Internal temperature of the meatballs within the steam warmer was measured at 113F.]
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food shall be held at 135°F or above (except that roasts cooked using time and temperature parameters in 3717-1-03.3 may be held at 130° F), or at 41°F or less. [Note: Meatballs were heated to 165 and returned to the steam warmer to hold at 135F or above.]

- Observed an improperly cleaned storage area for refuse, recyclables, or returnables. Debris (wooden boards, bottles, bags, etc) and unnecessary items (old television, boxes, etc.) were observed in the area surrounding the dumpster. Per discussion with PIC, other operators in the shopping strip have been discarding and storing refuse and debris in the enclosure
A storage area and enclosure for refuse, recyclables, or returnables shall be maintained clean and free of unnecessary items. Remove debris and unnecessary items from the dumpster area to prevent pests.
- Critical: Observed working containers of poisonous or toxic chemicals that were not properly labeled with the name of the material. Observed a spray bottle containing clear liquid with no label on the prep table
To prevent health hazards, working containers used for poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Note: Spray bottle was labeled at the time of inspection.

[Meatballs ranged in temperature from 122 to 145 degrees Fahrenheit. All meatballs reheated to at least 165 degrees Fahrenheit. Steam well temperature was increased.]
