  • Critical: Food employee(s) did not wash hands in situations that specifically require them to do so. Observed employee putting on a new pair of gloves without washing hands.
    To prevent contamination, food employees shall clean their hands and exposed portions of their arms after switching between working with raw food and with ready to eat food
  • Critical: A quaternary ammonium sanitizing solution did not meet the minimum requirements for temperature, concentration, and/or water hardness. Observed quaternary ammonium sanitizing concentration in 3 comp sink below 100 PPM
    To prevent pathogen growth, a quaternary ammonium sanitizing solution shall: (a) Have a minimum temperature of 75F,(b) Have a concentration as specified and as indicated by the manufacturer's use directions included in the labeling, (c) Be used only in water with 500 ppm (mg/l) hardness or less, or used in water having a hardness no greater than specified by the manufacturer's label. Quaternary ammonium concentration should be between 200-400PPM
  • The physical facilities are not being maintained in good repair. Light in freezer was not in working order.
    The physical facilities shall be maintained in good repair. Replace light bulb in cooler to provide adequate lighting in freezer.

  • Critical: TCS foods were not being held at the proper temperature. Turkey slices stacked above the well/cold line of the prep cooler were holding at 51 degrees Fahrenheit.
    TCS foods must be held at 41°F or less to help prevent foodborne illness. Note: The turkey was removed immediately and replaced with turkey from the walk in cooler. Turkey was no longer stacked above the well, but below the 'cold line.' Correct By: 03-Jun-2014
