[Two large, deep containers of red chowder dated from precious day stored covered in walk in cooler below bottom shelf on floor. Chowder between 54degF and 59degF after overnight storage.]
  • Observed cutting board grooved/pitted and no longer cleanable at several cookline sandwich bar stations.
  • Critical - Observed encrusted material on can opener.
  • Observed equipment in poor repair. 3 rubber spatulas no longer consructed for food use. Edges are heavily chipping and cracked.

  • Critical - Observed food being cooled by nonapproved method. Observed 3 covered smaller rectangular metal pans approx 6"wide, 12" long, 4"deep, of cooked rice cooling in walk in cooler from prep. Pans are stacked on each other, each covered, and all surrounded by other rice dishes once cooled and now warming up and insulating the hot pans from proper cooling. Corrected On Site by removing pans and putting in ice bath. Repeat Violation.
