Dishmachine chlorine sanitizer not at proper minimum strength for glasses.NOTE:UNTIL REPAIRED USE THREE COMPARTMENT SINK TO WASH,RINSE AND SANITIZIE GLASSES.This violation appears to an on going problem since it was noted on 9/30/08 inspection and glass dishwasher was not working at all on 2/24/09 inspection.Manager needs to implement daily testing with chemical chlorine test kit strips to ensure glass dishwasher is sanitizing.
- Critical. No currently certified food service manager on duty with four or more employees engaged in food preparation for more than one hour during entire inspection.General manager [certified] had stepped out to run errands again before start of inspection per person in charge. Repeat Violation.
