  • Basic - Wiping cloth quaternary ammonium compound sanitizing solution not at proper minimum strength. 100 ppm in a bucket stored on the prep table. Corrective action taken. Dumped the quaternary solution 200 ppm **Corrected On-Site**
  • High Priority - Potentially hazardous (time/temperature control for safety) food cold held at greater than 41 degrees Fahrenheit Placing items on a false bottom or the use of trays creates an air gap which keeps the TCS from maintaining a proper cold hold temperature, because they are not in contact with the cold surface of the food container. There is as much as a 6 degrees difference because of this practice. Front counter: roast beef 45, ham 45 both in a container with a false bottom. Poultry 46. Pastrami 45 both on trays. Corrective action taken. The removed the false bottoms and placed the items to cool in the walk in cooler and added new foods to the front counter without the false bottom. Discussed using a time program for the chicken and all foods on trays.
