TCS Foods = time/temperature controlled for safety foods
IV - Person-in-charge/Demonstration of Knowledge (-) The person-in-charge stated raw chicken and reheated leftover foods shall be cooked to 160 F. Leftover foods and raw chicken shall be cooked to at least 165 F for at least fifteen seconds to eliminate harmful bacteria. Proper Cooking temperatures were discussed with the operator during the inspection. CDC Risk Factor 4 - Unsafe Source
VII - Cold Holding (-) In the walk-in cooler observed ground beef held at 55 F. Cold TCS foods shall be held at 41 F or below to prevent bacterial growth.
