**Facility is using 2 compartment sink incorrectly. PIC was not able to demonstrate or explain how to set up the 2 compartment sink for sanitizing. Iodine sanitizer is present in the facility, however, there are not testing kit available. PIC also explained that when utensils and equipment are cleaned, they are washed in soap and water and then rinsed and left to air dry. This is not acceptable. Sanitizing must take place. For 2 compartment sinks, detergent sanitizer must be used. Both compartments of the sink should be filled with water and detergent sanitizer at a temperature and concentration stated by the manufacturer.
**Inspector will return on Monday, 6/18/2012 with further directions on use of the 2 compartment sink

At the time of the follow-up inspection, all critical violations have been corrected. The facility is permitted to use what sanitizer is left on site. Once that sanatizer is gone, the facility needs to purchase DETERGENT SANATIZER FOR TWO COMPARTMENT SINKS
