-Shield lights above clean equipment & food prep area.
-Repair walls throughout facility to make smooth & easily cleanable.
-Repair/ replace cooler gaskets on 2 prep top coolers, upright cooler & upright freezer in kitchen.
-Provide sweeps/ seal gaps on both side doors.
-Clean walk-in fan covers in basement walk-in cooler.
-Provide proper air gap on downstairs ice machine.
-If using upstairs bar, the hand washing sink must be fixed & maintained in good repair.

All cold TTCS foods were being maintained at or below 41 degrees F.

Observed sliced salami and cheese dip in reach in prep coolers not date marked. Must date mark all TTCS foods held for more than 24 hours to ensure the food is used or discarded within 7 days. Food was discarded at time of inspection.

XI. Protection from contamination
Observed mold on the inside of ice machine. Must clean all food contact surfaces more frequently to prevent contamination. Ice was removed and equipment is going to be cleaned. Maintenance stated equipment if fully cleaned every 3-4 weeks.

Observed inside left wall of ice machine broken/ cracked. Must fix and repair to make smooth, easily cleanable and to prevent contamination.
The facility was clean and I did not observe any current signs of pests and/ or rodents. Complaint closed. No cause for further action
