The only items that have to be thawed are their soups which are thawed under refrigeration or in the microwave.

Note: Has policy and reviewed with person in charge. Manager was aware of specific symptoms and illnesses for which employees should be excluded from working in the kitchen.
II. Personnel Cleanliness (+)
Note: Acceptable and all employees appeared in good health.
III. Hand washing, Prevention of Contamination from Hands (+)
Note: Stocked and used appropriately.
Corrective Action Recommended: Hand sink was blocked (near dish machine). Manager moved the bag that was blocking the soap and hand washing sink. In addition this hand sink did not provide hot water at the time of the inspection and water pressure appeared low.

Note: Manager is Serv Safe certified. Based on the conversation and answers related to food safety, the manager seemed knowledgeable in food safety.

Note: Most of the foods come in fresh, otherwise foods are thawed inside cooler.

Note: All temperatures were in compliance. The only thing the facility cools are soups. Manager explained their use of ice baths as a method for cooling soups.
