At time of follow up inspection most critical violations were corrected.
Discussed cold holding.
Discussed checking the dish machine sanitizer more frequently.
Dish machine chemical was not registering. Facility contact Ecolab and they will be coming out to fix machine.
Facility has a three compartment sink, please use three compartment sink when dish machine is not working properly.
