WITHIN 14 DAYS FACILITY NEEDS TO REPLACE THE MICROWAVE WITH A COMMERCIAL MICROWAVE, SEAL WOOD CABINETS, AND SEAL CABINETS TO THE WALL. FACILITY IS TURNING THE BATHROOM BY THE KITCHEN INTO A UTILITY ROOM FOR THE MOP SINK.

Person in charge- Lisette Taylor. Food is purchased from GFS or Sam's Club. Observed refrigerator holding at 37 F. Most food is microwaved.

This facility was on the list of confirmed shigella cases and therefore an inspection / consult was initiated. I spoke with Marsha Riley (Director) and Danielle Wright (PIS in kitchen) about SOP's in kitchen concerning food cooking temps, logs for cooking, employee illness, sanitizer usage, wiping clothes, and general sanitation. Currently no employee illness logs are maintained. The owner and director had PIC / Level 1 certificates posted in the kitchenbut the cook (PIC in the kitchen) had not attended a food safety class. A current class schedule was left with them.
A residential freezer and 2 electric skillets were observed in the kitchen. Must be replaced with commercial equipment.
A copy of the Food Safety Code concerning employee illness HIPPA rules, and a copy of an employee log was left with Marsha (Director).
This center is open from 6am - 11pm with about 17 employees and about 56 (max) students.
I would suggest that the center keep ice in the freezer for calibrating the thermomter.
When you have a staff meeting you might like to invite myself or your sanitarian to give a short info session about an issue of concern and to answer questions your staff might have.

This report was reviewed with Danielle who was preparing the meal at the time of the inspection. Today's meal included chili, corn, fruit. The person in charge has taken a level 1 food safety class and is awaiting her certificate. Discussed with the person in charge setting up a three compartment sink, cold holding temperatures and calibrating a thermometer among other things. Information sheets on shigella (provided by the health department) on sanitizing surfaces were provided. Discussed with the person in charge procedures for cleaning tables. Recommended the refrigerator in the baby room be provided with a thermometer. Please obtain ice so that the thermometer for the facility can be calibrated properly. Please ensure that dishes and other surfaces (i.e. door knobs, tables, toys) are properly cleaned and sanitized. Please ensure proper hand washing is occuring. Observed no violations at the time of the inspection. Updated the green sign.
