Description: Caponi Art Park is named for Anthony Caponi, a sculptor who served as chair of the Macalester College art department for decades. The hilly, forested lakeside land that now constitutes the Eagan art park started as Caponi’s private land; since the 1940s he’s both added sculptures to it and sculpted the land itself with tools ranging from shovels to bulldozers. Thus, it’s not just a sculpture park but truly an art park—a space uniquely created by a single artist. It opened to the public in 1992 and is now run jointly with the Eagan parks department; in his late 80s, Caponi continues to live and work in a house on the land. It’s obviously a must-see for art buffs, but the park has attractions for everyone, with an active programming schedule that includes children’s activities, visits by spoken-word poets, and theatrical performances.

Description: Less than 30 minutes from both downtown Minneapolis and St. Paul, this Dakota County park covers more than 2,000 acres of lakes, marshes, beaches, and trails. Open year-round, the park is divided into east and west sections connected by an immense network of trails. Nearly every outdoor activity is available—swimming in Schultz Lake (one of the few local beaches with lifeguards present), RV and tent camping, hiking, picnicking, horseback riding, mountain biking, and cross-country skiing. Fishing and all nonmotorized boats are allowed on Jensen Lake, and in winter ice fishing is allowed on the lake as well.Lebanon Hills is a popular destination for winter sports enthusiasts. The park has two great ski areas: the 2-mile skate-ski offers long, tough uphills and fast, winding downhills (not recommended for beginners), and several other park trails are tracked for classic cross-country skiing. The trail system was originally laid out for hiking and horse paths, so some downhill corners can be awkward for skiers. Cross-country ski and snowmobile trails snake through the park’s wooded, hilly terrain, and hot cocoa and snacks are available at the warming house at Schulze Lake.

Description: Hoban is a casual, small restaurant specializing in favorites such as bi bim bop (steamed vegetables over rice) and kalbee (thinly sliced marinated beef ribs that are grilled). The restaurant serves beer and wine and is open for lunch and dinner Tuesday through Sunday. The restaurant accepts Visa and MasterCard only.

Description: Seven-acre Cascade Bay in the St. Paul suburb of Eagan is the largest outdoor municipal water park in the Midwest. Its lazy river, multiple slides, sand beach, and more are extremely popular with just about any kid. Guests under 42 inches tall and those older than 62 get in at a reduced price.
