Description: Herbfarm is too special to leave out when you are talking about restaurants. This Pacific Northwest icon regularly tops the lists of best restaurants in the United States and even globally—as well as the most-expensive lists. Ahead of its time, Herbfarm was one of the first restaurants in the country to focus solely on preparing regional food that was locally sourced. The nine-course dinners, infused with local herbs and lovingly paired with wine, leave diners stunned. Menus are themed with the season, often changing as frequently as every few weeks or even days. The dining room is a treat for the eyes, designed with objects collected from around the world and centered on the century-old fireplace, created with two tons of whimsical tiles saved from an Atlantic seaboard mansion. There is a single seating nightly, with an optional predinner Wine Cellar Open House and outdoor hosted garden tour. Herbfarm is about a twenty-minute drive north from downtown Seattle, and dining here is an orchestrated event to be absorbed and treasured.
