Description: From an unlikely spot in industrial Georgetown, under the shadow of I-5 in South Seattle, The Corson Building is truly unique in the city. Billing itself as a home, a restaurant, and a community, celebrity chef Matthew Dillon (of Sitka & Spruce) opened this location almost as a social experiment, directly connecting food with its cultural and communal roots. Dillon wants his patrons to share one of the few human experiences we all have in common—that of eating. Strangers sit down with one another at candlelit group tables to partake of the menu of the day, which changes on both Dillon’s whim as well as available ingredients from The Corson Building’s own garden and local farmers. The organic processes that form the backbone of The Corson Building include relationships with winemakers, fishermen, artists, and the local community. Dillon also offers cooking and wine workshops, private events, and special fund-raisers here.
