    Observation:egg rolls in bowl above load limit within make table > 45F discarded at TOV.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Observation:foods are missing date marks.
  • Storage and maintenance of wet and dry wiping cloths
    Observation:wiping cloths are sitting out on counter. no sanitizer is set up.
  • Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours
    Observation:cooked shrimp placed into a metal pan 6+ inches thick, pan sitting on ice. food is not cooling properly. reviewed proper cooling parameters... Taken out of pan, layed on sheet pan and placed into freezer
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation:raw chicken prep on same area and at same time with vegetables.
  • Test kit provided and used to measure sanitizing solution concentration
    Observation:no test strips available at time of visit.
  • Single -service and single-use articles may not be reused
    Observation:many hot sauce squirt bottles are being re-used for both food and toxics. Discontinue re-use asap.
  • A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
    Observation:a thin tip thermometer is needed. There is no thermometer to check temperatures of food at time of visit today.
