Observation:Beverage Air cooler at far end of cook line is not holding temp, no foods in currently, air temp at 47 degrees, service being done now.

Observation:Light showing through on left corner of exit door on bar side, seal whereever can see light showing through when closed.

Observation: Need splash guard to protect food contact surfaces, at front counter left side next to ice bin, and both sides of handsink in kitchen area.
- Material characteristics of non-food contact surfaces
Observation:1)Seal underside of the wooden bar top at the front counter area and bar underside above four compartment sink area, suggest two coats of light colored paint or varnish. 2) Unable to determine if upright support board beside cooler at front counter has been sealed, double check when doing other sealing projects.
- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation:Thermometer needed for Pepsi cooler in wait station.

Observation:Ice machine has some buildup along seam line on upper door access port right side and both upper and lower track areas, and upper track of hinged door, all need further cleaning

Observation:1)Transition piece needed to adjust between the flooring of main RR's and existing dining room flooring. 2) Piece of concrete missing on flooring just outside men's RR door, level area to prevent trip hazard. 3) Gap in flooring in warewashing area by two door cooler and in wait station, grout seams to prevent trapping food. 4)Several ceiling tiles missing yet with work being done, all ceiling tiles will need to be in place. 5) Floor wall coving needed for the closet area in the bar. 6)Damaged corner grout near the horizontal assit rail in WRR bar side, repair.
- Equipment location, installation, repair, and adjustment
Observation:1)Beverage Air cooler at far end of cook line has torn gaskets on L door needs replaced, and rusty lower edge on R door, R door gasket needs cleaned. 2)All green wire shelving racks along the cook line are soiled and rusty in several areas, clean, reseal or replace ones where coating is worn through. 3)Gutter and drip pans yet to be installed on hood system. 4)Large browning oven yet to be completed, still in process of cleaning. Both items to be checked with recheck. 5)Safety chains yet to be installed on wheeled cook units along cook line. 6)Door unhinged on three door cooler along cook line, repair.
