Observation: Dough scrapers are stored on handsinks.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: Floors behind equipment and including baseboards and drains are not clean - observed food debris buildup. Management indicated these are cleaned on Saturdays - due to the volume of the store frequency of the cleaning is not frequent to prevent buildup. Walkin cooler/freezer floors also have debris buildup.
- Cutting surfaces maintained
Observation: Cutting surfaces on back make table have deep grooves and are discolored making them difficult to clean.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation: Pizzas holding on buffet and on warmer station at 114, 120, and 130 degrees. These pizzas were discarded and buffet procedures for Pizza Ranch were consulted.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation: Vents above pizza oven are soiled with grease buildup.
- Raw fruits and vegetables washed before cutting, combining with other ingredients, cooked, served, or offered for human consumption in a ready to eat form
Observation: Potatoes are not washed before cutting and preparing.
