Person in charge is present Observation:Upon entering the establishment, employee was not sure who was in charge. Chain of command should be established at all time when a store is open for business.
When to wash Observation:Employee changed jobs from working the cash register to preparing food without washing her hands before putting gloves on. Inspector asked her to take the gloves off, wash her hands and put new gloves on. Employee voluntarily complied.
