Observation: The sanitizer barely registered on the test strip in the sanitizer compartment of the three compartment warewash sink. COS by adding sanitizer until correct concentration.

Observed diced tomatoes at room temperature for topping pizza's - placed in refrigerated prep table for correction.

Repeat Violation - As previously stated, a thin-probe tip sensitive digital thermometer is required for use when testing cook and/or reheat temperatures of thin foods such as chicken tenders or burger patties.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observed chicken tenders exiting the oven at 110*. A thin-probe tip-sensitive thermometer is not available for kitchen staff to monitor reheat temperatures of thin foods. Not only is a proper thermometer required for thin foods, but a long-term procedural change or adjustment of oven parameters must be implimented to ensure proper temperatures are achieved for food safety.
