Observation: no hand washing was done after changing tasks and before putting on gloves

Observation: several boxes of frozen foods were open and exposed in the walkin freezer today. Be sure to close the bag or box to avoid contamination from the premises.
- PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
Observation: chocolate mix in ice cream machine was 45.3 deg today
- Using a handwashing sink- operation and maintenance
Observation: sandwich line hand sink was blocked with cart of buns during part of my inspection which impedes the ability to properly wash hands when needed
- Storage and maintenance of wet and dry wiping cloths
Observation: wet wiping cloths should be stored inside the bucket of sanitizer water between uses

Observation: there were several spray bottles observed without labels today throughout the kitchen and mop sink areas.

Observation:redish purple liquid in spray bottle by 3 comp sink needs labeled.
- PHF/TCS food that is cooked and cooled on premises is reheated within 2 hours to 165°F or above for 15 seconds for hot holding
Observation: product in the steam table needs to reheat faster. At time of inspection food had been heating for 1.5 hours but was still at 111deg chicken breast and 106deg brisket. Foods were heated in oven and steam table was adjusted accordingly.
