    Observation: Quat sanitizer buckets tested low in the kitchen and prep areas. Staff made up new buckets at the correction.

    Observation: Lettuce at beginning of cook line storing at 44F. Employee added additional ice and water to holding unit to bring temperature back down. --Observation: Salsa holding at 44F in front line unit. Employee was able to adjust unit to bring back in compliance.

    Observation: No clean up procedures for vomit/ diarrhea events on site. Manager printed off procedures to post.

    Observed steak and chicken hot holding between the temperature of 118-129*F at the front line open refrigeration unit. Person in charge added more water to hot holding unit and increased the temperature. Corrected at time of inspection. --Observed sour cream at the service line open refrigeration unit at a temperature of 42*F. Observed pico de gallo at a temperature between 43-44*F. Person in charge changed out the unit's containers. Person in charge stated they will contact maintenance to have unit serviced. Establishment will use time as a public health control or store food items surrounded by ice.
