Observation: Handle of scoop in rice bin was laying in product. Discussed item with manager and scoop handle was inverted during inspection.

Observation: Bucket of sanitizer solution was being stored directly next to container of corn salsa. Manager moved item during inspection.

- Established procedures for responding to vomiting and diarrheal events
Observation:Has not established procedure yet for Clean-up of V&D events, given information on sample procedures to utilize to develop their own response, ie bucket and supplies with instructions on usage.

Observation:Rice scoop handle touching rice, must store with handle inverted out of product.
- Storage and maintenance of wet and dry wiping cloths
Observation:Small red sanitizer buckets being stored on floor along front line, must store off floor and not directly adjacent to or over food or food service items.
- Air drying of equipment and utensils
Observation:Has several stacks of metals pans and bowls that are still wet on interior surfaces, must allow to fully air dry before stacking for storage. Does have wire rack above the warewashing area, suggest using this area for air drying.
- PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
Observation:Pinto beans at 122 degrees F , warmer just turned on recently, reheated to 165 degrees F before put back on hot hold. Other beans just cooked at 148 degrees in hot hold unit.
- Multiuse food contact surfaces are cleanable
Observation:1)Rice scoop had hole in end that is taped shut to keep rice from accumulating there, if kept inverted out of product the hole should not matter. Remove tape since is not a smooth, cledanable surface. 2)Blue plastic ice scoop in cracked by the handle, must replace since is no longer cleanable surface. Has metal scoop to use now.

- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation:1) Clean lighted shelf underside opposite the culinary sink, soiled. Still in process of cleaning all surfaces in the facility.
- Chemicals and devices that generate chemicals that are applied to fruits and vegetables are approved and used in accordance with the manufacturers instructions
Observation:Test strips needed for the chemical wash for the vegetables.
- Outer openings are protected
Observation:Self closure mechanism needed yet for the patio access door.
- Light bulbs, protective shielding
Observation:Light shield has been removed from the light in the walk in cooler, replace to protect the lights.
