    Observation: There were raw meats stored above cheeses in the reach in refrigerator. Corrected on site by moving raw meats to a lower shelf.

    Observation: There was a package of venison sticks marked "not for sale" in the little refrigerator. There was multiple jars of apparent home canned goods in the reach in refrigerator. Corrected on site by disposing of items.

    Keep handwash sink free of storage and available for frequent use.
  • Food temperature measuring devices are provided and readily accessible
    Thin probe tip sensitive digital thermometer is required for kitchen use.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Chlorine tested nearly zero ppm at the mechanical dishwasher - new container of chlorine was placed and unit now appears to be working properly.
  • Premises maintained free of insects, rodents, and other pests
    The presence of insects rodents, and other pests are controlled as required
  • Food shall be obtained from sources that comply with law
    Observed home canned pickels and peppers, in addition to many meats in reach-in freezer marked "not for sale" and fish (walley & bassl) where source is unknown. All must be removed from premises.
