Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours Observation: Observed multiple items in walk in coolers that were not date marked. Corrected on site.
Cutting surfaces maintained Observation: Observed wooden butcher block and cutting boards that have multiple cuts and gauges.
Manual warewashing sinks requirements Observation: Observed a two compartment sink where they wash their pots and pans. Informed PIC need of three compartment sink to wash, rinse, and sanitize these pots and pans. Have until June 1, 2014 to have a three compartment sink installed for use. Until then all pots and pans will need to be washed in the three compartment sink where the students dishes are.
Light bulbs, protective shielding Observation: Observed non shielded light bulbs in the walk in cooler and in the dry storage area.
Tableware that is not pre-wrapped is presented so that only handles are touched Observation: Observed forks, knives, and spoons that are laid out flat.
