  • Floors, walls and ceilings
    The plant is not constructed in such a manner as to allow floors to be adequately cleaned and kept clean. Specifically, carpeted floor of office area and storage room are covered in flour dust, remove carpet for easier cleaning.
  • Failure to clean - general
    Failure to clean food-contact surfaces and utensils as frequently as necessary to protect against contamination of food. Specifically, I observed the Hobart floor mixer bowl, paddle, underneath side of mixer including apparent gearbox oil and area all around the mixer soiled. In other areas of production the sheeter, scale, table tops, wooden trays, racks etc., were observed with apparent dried on bread dough and loose flour covered most all areas of the production room. The interior of the refrigerator used for ingredient storage was observed soiled and had water pooling on the bottom.
  • Failure to wear
    Failure to wear hair nets or other effective hair restraint where appropriate. Specifically, workers in the production area were preparing food with no hair restraint.
  • Fans/air blowing equipment
    Failure to locate and operate fans and other air-blowing equipment in a manner that minimizes the potential for contaminating food. Specifically, I observed two floor fans blowing upward onto a rack of finished bread for the purpose of cooling. The fans were just up off the floor surface and capable of drawing dust and floor debris up off the floor and blowing it onto exposed bread.
  • Non-food-contact surfaces (S)
    Failure to clean non-food-contact surfaces of equipment as frequently as necessary to protect against contamination. Specifically, a general cleaning of the floors, shelves, racks, and equipment throughout the facility is needed.
  • Reasonable precautions
    All reasonable precautions are not taken to ensure that production procedures do not contribute contamination from any source. Specifically, I observed two containers of empty pop cans stored on a pallet of bagged flour.

    Personal belongings were stored in an area where food is exposed. Specifically,personal items car keys stored on food prep counter in front of slicer

    Failure to provide adequate screening or other protection against pests. Specifically, 2 outer doors open to help with excessive heat, doors must either be kept closed or install screens, overhead door has gap at base where light is coming in

    Failure to properly store toxic cleaning compounds sanitizing agents in a manner that protects against contamination of food-contact surfaces Specifically,2 bottles of chemical cleaner on shelf above food prep areaor stored next to prep equipment

Specifically, ***Baking equipment is soiled and needs cleaned, firm will begin using 3 comps ink with sanitizer and clean equipment on an as needed basis, --Failure to conduct cleaning and sanitizing operations for utensils and equipment in a manner that protects against contamination of [food] [food-contact surfaces] [food-packaging materials]. Specifically, ***Food contact surfaces are mostly dry cleaned and baking paper is used between food contact surface and food product-most cooking baking equipment is soiled and needs wet cleaning with sanitizer, firm will also provide chlorine test strips, firm will clean in place equipment such as floor mixers

    Failure to provide [hand washing] [hand sanitizing] facilities at each location in the plant where needed. Specifically, ***Handsinks must always be easily accessible
