Observation: tray of clean utensils in dishwashing area was all going different directions. There should be more organization so food contact part is not touched when moving

Observation: external thermometer was inaccurate (showed 81deg) on freezer by the dock. Internal therm was working-cover the one which isn't working so there is no confusion.
