Cleaning and sanitizing operations Failure to conduct cleaning and sanitizing operations for utensils and equipment in a manner that protects against contamination of food or food-contact surfaces. Specifically, the permit holder verbally stated that sometimes equipment or utensils are washed with water only and then immersed into bleach water to sanitize without a clean water rinse between washing and sanitizing. The permit holder also stated sometimes a "Mean Green" cleaning compound is used to clean equipment or utensils but no additional sanitizing steps are followed. Based upon conversations with the permit holder there does not appear to be a uniform protocol used for cleaning and sanitizing food contact equipment and utensils.
Work-in-progress Failure to handle work-in-progress in a manner that protects against contamination. Specifically, discussion with the permit holder revealed that raw rabbit meats are vacuum packaged. The raw rabbit meats are typically vacuum package in a fresh, or refrigerated state
Lack of effective pest exclusion Effective measures are not being taken to exclude pests from the processing areas. Specifically, I observed spider webbing in ceiling corners of the processing rooms. Additionally, I observed dead insects on the floor along the base of the south wall of the south processing room. I also observed tall grass growing around the exterior of the processing facility.
