    Observation:Numerous evidence of pest in the establishment (roaches). Live roaches crawling inside ice machine, behind equipment. Floors soiled with food and grease residue, behind equipment.

    Observation:Gaskets in ALL cooling and freezing units in poor condition (not sealing tight) Gasket has come loose from the equipment
  • Equipment used for heating, holding, and cooling of food shall be sufficient in number and capacity to provide adequate food temperatures
    Observation:Establishment without a prep cooler with mechanical refrigeration to maintain a constant temperature of 41 or below. Cold items placed on an ice container, egg mixture, sausage mixture, cheese. Establishment has SOP's for lettuce and tomatoes to be kept outside temperature control, Variance for the cheese for 2014 has not been submitted to the department.

(establishment does have a dumpster outside). Refrigeration equipment with loose gasket, heavy food residue inside, freezer not keeping foods frozen.
