Health Market - observed that the Health Market carries frozen wheat grass that is obtained from the Chariton Frozen warehouse. The product is manufactured by an establishment that is not licensed to sell juice. The product was not on the customer shelf during this inspection. The PIC agrees not to sell the product to customers nor to provide it as a sample or to employees.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Meat case - observed butter product that is made on premise that is date marked for more than 7 days.
- Foods are cooled using appropriate methods
Bakery- observed bread topped with cooked fresh tomatoes cooling at room temperature. Product was placed in the walk-in cooler to cool properly.
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Various areas throughout the establishment were identified as areas that need to be maintained clean.
- Roasts held at a temperature of 130°F or above
Kitchen - observed food rack with various potentially hazardous foods out of the cooler due to putting stock away. Foods temperatures were above 41*F. The food rack was returned to the cooler. --Kitchen - observed par cooked bacon next to the grill. Par cooked bacon is required to be held between 41*F - 135*F.
