    Observation: Food product was cooling covered in an ice bath. Person in charge uncovered food product.

    Observation: Cutting board was worn, discolored with deep scoured marks.

    Observation: Raw shell eggs stored above potatoes. Person in charge removed potatoes to be stored on a different shelf.
  • Handwashing aides and devices, use restrictions
    Observation: Food container stored in hand sink. Person in charge removed pan from sink.
  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation: Dish machine was not dispensing sanitizer. Person in charge stated they would use their three-compartment sink to wash/rinse/sanitize equipment until dish machine can be serviced.
