Plumbing system maintained in good repair Observation: PVC piping that drains from the ware washing sink to the floor drain is placed so that all the water does not go directly into the floor drain, causing standing water in ware washing and storage areas. Cleanability of floors, walls, and ceilings Observation: Coving missing at wall/floor juncture near ware washing area. Air drying of equipment and utensils Observation: Wet stacking of dishware in ware washing area. Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation: Ambient air temperature thermometers not placed in the warmest part of the walk in coolers. Thermometers are hanging in front of the fan. Physical facilities maintained clean: Cleaning frequency, restrictions, and methods Observation: Walls/floors soiled around/under equipment. Dust accumulation on ceiling fixtures. In-use utensils, between-use storage Observation: In use utensils used for cooked chicken and biscuits stored in contact with soiled equipment in between uses. Utensils changed out and stored on clean surface of prep area. Storage and maintenance of wet and dry wiping cloths Observation: Sanitizing solution used to store wiping cloths is visibly soiled.
