    Observation: Handle of microwave had food residue build-up. Bottome vent of refrigeration unit had residue build-up next to fryers. Reach-in oven had food residue build-up next to flat-top grill. Water heater dispensed water onto floor. Black shelf across from 3-compartment sink, storing clean equipment, had residue build-up. Ceiling had food splatters in the dish room. Metal containers next to walk-in-cooler, had residue build-up on exterior.

    can withstand repeated warewashing
  • Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
    Observation: Interior of ventilation and filters were soiled.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Cut avocado at 72*F. Food employee removed avocado to be stored in refrgeration unit.
