    Observation: Wall in kitchen opposite of hand sink was not sealed. Tiles in dishroom and under hand sink were broken and cracked. Dish room had exposed concrete. Person in charge stated they will seal the wall with smooth, non-absorbant, and easy to clean surface. Kitchen had missing baseboards throughout kitchen.

Person in charge stated they were remodeling and have purchased ceramic tiles to install in the kitchen. Person in charge stated they will seal the wall with a smooth , non-absorbant, and easy to clean surface. Kitchen had missing baseboards throughout kitchen.
  • Frozen PHF/TCS foods are properly slacked and thawed
    Observation: Chorizo sausage and beef thawing on shelf in kitchen. Person in charge removed product to thaw under refrigeration.
  • Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
    Observation: Raw chicken, beef, and shrimp stored above produce in sliding door refrigeration next to the fryers. Person in charge rearranged the cooler to store raw animal products below produce. Observed raw chicken stored above ground beef in walk-in-cooler. Person in charge moved chicken to be stored above other chicken.
  • Ice used as exterior coolant not used as a food
    Observation: Container of limes stored in ice machine. Person in charge removed container of limes.
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation: Cooked beans hot holding at 125*F. Person in charge increased temperature of hot holding unit and voluntarily discarded beans to add new batch.
  • Eating, drinking, or using tobacco
    Observation: Open beverages in kitchen. Person in charge discarded beverages.
  • Bait stations, pesticides, and tracking powders approved
    Observation: Uncovered rodent bait station in server station. Person in charge discarded station.
  • In-use utensils, between-use storage
    Observation: Ice scoop handle in contact with ice. Person in charge removed ice scoop.
