Date mark ready to eat foods with the day of prep, this counts as day one, seven day hold on these products freezing stops the time but must be marked in/out of freezer.

Foods are cooled using appropriate methods Using plastic sealed containers to cool foods. Cooling handout given. Suggested uncovering foods and storing them at the top of the cooler and using metal pans.
Roasts held at a temperature of 130°F or above French Fries stored in cooler, currently not frozen, product voluntarily discarded by manager, corrected on-site. Freezer unit was not working at time of inspection.
