Cooked PHF/TCS food cooled from 135°F to 70°F within 2 hours and from 135°F to 41°F or below in 6 hours Large roast cooked yesterday =- cut into smaller pieces 46-48F you have 6 hrs in which to bring down the temp to 41F - product will be discarded.
