Observation:Taco meat left in crock pot walk in cooler & lid of crock pot with condensation. Baked potatoes wrapped in foil found in fridge. Foods discarded to correct and PIC was told proper cooling procedures. Written information provided for proper cooling.

Observation: Employee stated she does not always wear gloves when preparing ready to eat foods. Inspector explained the violation to the PIC to correct. Inspector will re-check at the next regular inspection

Observation:Raw meats, tenderloin, ground beef left on the counter at 57. Items placed in the cooler to correct. Inspector will re-check at the next regular inspection
- Equipment location, installation, repair, and adjustment
Observation: Interior of the walk in cooler with paint peeling. owner will fix as soon as the weather allows it.
- Cleaning of cooking and baking equipment
Observation:Fryers with heavy grease residue

- Roasts held at a temperature of 130°F or above
Sliced tomatoes at 76, left on the counter from lunch, discarded to correct. Raw tender loins at room temperature in between preparation and storage. I explain to the PIC the risk and proper way to prepare the meat without being out of temperature. Meats were placed in the cooler. Violations corrected at inspection. Inspector will re-check at the next regular inspection

Kitchen floors in poor condition
- Single -service and single-use articles may not be reused
Bread bags and margerine containers re-use for storing foods. PIC will replaced with re-usable containers to correct. Inspector will re-check at the next regular inspection
